Shredded Brussels Sprouts, Pear and Farro Salad

This salad is made with shredded brussels sprouts instead of lettuce – it’s the perfect switch up from your usual salad to make lunch anything but boring!

Shredded brussels sprouts make a great salad base

Tired of eating brussels sprouts the same way? This shredded brussels sprouts, pear and farro salad is the perfect meal to switch up your normal salad routine. A few months ago I was out of my usual kale and arugula but wanted a salad. I decided to shred my brussels sprouts and they have become my new favorite salad base!

One of my goals for March was to create at least 1 recipe a week that featured produce that was in season. In season produce is usually on sale and it tastes better, it’s a win-win! I found this handy graphic from Misfit Market on what is in season this month!

What you’ll need for this brussels sprouts, pear and farro salad

This salad is only 5 ingredients so it’s fairly simple but definitely not lacking in flavor! What you’ll need:

  • a bag of brussels sprouts (you can buy them preshredded or whole)
  • 1/2 cup cooked farro
  • bosc pear
  • slivered almonds
  • shredded parmesan cheese
  • lemon juice
  • olive oil
  • salt and pepper

How to make the salad

This salad is so easy to make, it is also a really great salad for meal prep since the brussels sprouts are so sturdy – they won’t wilt like romaine will! This salad comes together in a few easy steps:

  1. Make your farro. Farro is different than most grains in that you can boil it with excess water and just drain the rest, way easier than quinoa and rice! I love to buy the 10 minute farro from Trader joes.
  2. Shred your brussels sprouts. I halve mine and quickly shred in my food processor. If you don’t have a food processor I highly recommend you buying one – I use mine at least a few times a week, makes chopping foods so much easier! This is the one I have and I love it!
  3. Squeeze a lemon over the shredded brussels sprouts and drizzle with a little olive oil, salt and pepper. Massage until the brussels sprouts start to soften.
  4. Mix 1/2 cup of farro with the massages brussels sprouts
  5. Add sliced pear, some slivered almonds and some freshly grated parmesan cheese.
  6. Enjoy!

Ingredients

Creamy Chia Pudding with Citrus and Almonds 🍊 Creamy Chia Pudding with Citrus and Almonds 🍊 I had the best chia pudding in the most unexpected place last week - my @delta flight. It was so creamy and had a great coconut flavor so I made a note to recreate it once I got home and I got very close! This is super thick and creamy, had a delicious coconut taste and pairs amazingly well with @sumocitrus and the almonds are the perfect crunch! This also kept me full for HOURS! I used to skip breakfast and I’d be starving by noon but now I make sure to eat lots of protein + fat in the morning. It keeps me focused and energized through the morning and I want less snacks throughout the day, win/win! Recipe 🍊 what you’ll need: •1/2 cup canned coconut milk •1/2 cup plain 0% Greek yogurt •1/4 cup unsweetened vanilla almond milk •1 tsp vanilla •1 tsp sugar (I used @wholeearthsweetener ) •4 tbsp chia seeds • @sumocitrus •2 tbsp slivered almonds How to make it: •combine milks, yogurt, chia seeds, vanilla and sugar together and refrigerate overnight •in the morning give it a good stir, top with orange and almonds •enjoy!
5 days in San Jose del Cabo ☀️🍹 If you’r 5 days in San Jose del Cabo ☀️🍹 If you’re in need of some sun this winter, couldn’t recommend a trip to Cabo more! I had never been to San Jose del Cabo before and it was fantastic. The food, the weather and the ocean just can’t be beat Some highlights: ☀️dinner at @florafarms - def make a reservation and go at golden hour. It’s such a beautiful place and the cocktails and food were incredible ☀️a cabana at the @hiltonloscabos - we did this on Thursday and I was able to take all my meetings from the cabana while my friends enjoyed the beach and pool ☀️dinner and cocktails at @pescaditobreak - my favorite cocktail of the trip was from here, mezcalita tamarindo. If you like mezcal, it’s a must ☀️lunch at @lostresgallos - the courtyard was beautiful and the food was fresh and delicious. Perfect spot after strolling the downtown area ☀️tacos and mango margs at Restaurante Mexico. We ordered a huge feast of tacos here and it was all delicious We stayed at an air bnb in the costa azul area but if I go back I’d love to stay over in the La Laguna area. Thanks to Walmart for this one-stop shop for everything I need to host a great Big game party Recipe: sweet potato fries with Hunts® Tomato Ketchup •preheat oven to 425 •cut sweet potatoes into wedges, coat in olive oil, salt, and pepper •bake for 30 minutes or until crispy •serve with Hunts for dipping cauliflower wings with honey mustard •in a bowl mix together 1/2 cup flower with 1/2 cup almond milk and a tablespoon of garlic powder. Citrus Kale Salad 🥗 Post vacation, I’ve been Citrus Kale Salad 🥗 Post vacation, I’ve been eating all the veggies and this salad was perfect for a delicious, veggie filled lunch or dinner. Kale and citrus pairs perfectly together and my favorite citrus this season is @sumocitrus but any orange would do!
