Elote Kale Salad with Crispy Chickpeas

Giving my Kelly’s Killer Kale a Mexican twist with this Elote Kale Salad with Crispy Chickpeas

What is Elote?

If you’ve never had elote or Mexican street corn, traditionally it is a roasted corn on the cob, slathered in mayonnaise, covered in queso fresco with tajin and lime juice. If the idea of corn slathered in mayo grosses you out, I get it but trust me on this one, it’s delicious.

Growing up, my sister lived in San Jose California and there was a man that had an elote cart. He would walk up and down the street selling elote and it was always my favorite snack. Whenever I eat elote, I always remember those days of ordering it off the nice man in his cart and it brings back good memories.

I got the inspiration for this recipe from Eating Bird Food. I found myself always making the same tweaks to her recipe so I wanted to share what I do differently – try both of them out, they are equally delicious!

Ingredients You’ll Need For Mexican Street Corn Kale Salad

Some of the ingredients you’ll need for the Mexican Street Corn Salad. I got them all at Trader Joe’s but you can find all these at your local market (minus the seasoning)

Don’t be turned off how many ingredients you need for this, I bet most you already have in your pantry! What you’ll need:

Elote Salad

  • Bag of frozen roasted corn (can sub canned corn)
  • 1 jalapeno, chopped
  • 1/2 red onion, chopped
  • 3 garlic cloves, chopped
  • 1/3 cup cilantro, chopped
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 lime, juiced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon “Everything but the Elote” seasoning – can sub more chili powder
  • 1/2 cup queso fresca (can sub feta).

Kale Salad

  • Bunch of kale
  • Juice of 1 lime
  • 1 second spray of avocado oil
  • Salt and pepper
  • Add on’s: chopped tomatoes, bell peppers and avocado

Everything but the Elote Crispy Chickepeas

  • Can of chickpeas, rinsed
  • 1 second spray of avocado oil
  • 1 tablespoon Everything but the Elote seasoning

How to make Elote Kale Salad

  1. Make the elote salad:
    1. heat up corn over the stove
    2. mix all the ingredients in a bowl. Add corn once warmed up
    3. Set aside in refrigerator and let those flavors marinate while we you prepare the rest of salad
  2. Make the crispy chickpeas:
    1. coat the chickpeas with avocado oil and elote seasoning
    2. place in air fryer and air fry at 400 for 15 minutes, shaking every 5 minutes, or until crispy
  3. Prepare kale
    1. Tear kale from stems and chop finely
    2. juice lime, spray with avocado oil and sprinkle with salt and pepper
    3. Massage well until kale is no longer tough
    4. ***see my tips on how I prepare kale here.
  4. Assemble elote kale salad
    1. Add elote salad to kale
    2. Add any additional vegetables such as tomatoes and bell peppers
    3. Mix well
    4. Top with crispy chickpeas and avocado
  5. Enjoy!

Ingredients

  

  • Bag of frozen roasted corn can sub canned corn
  • 1 jalapeno chopped
  • 1/2 red onion chopped
  • 3 garlic cloves chopped
  • 1/3 cup cilantro chopped

  • 1 tablespoon mayonnaise
  • 1 lime juiced

  • handful of bell peppers
  • avocado
  • Can of chickpeas rinsed

  • 1 tablespoon Everything but the Elote seasoning

Instructions

 

Make the elote salad:

  • heat up corn over the stove
  • mix all the ingredients in a bowl. Add corn once warmed up
  • Set aside in refrigerator and let those flavors marinate while we you prepare the rest of salad

Make the crispy chickpeas:

  • place in air fryer and air fry at 400 for 15 minutes, shaking every 5 minutes, or until crispy

Prepare kale

Assemble elote kale salad

  • Add elote salad to kale
  • Add any additional vegetables such as tomatoes and bell peppers
  • Mix well
  • Top with crispy chickpeas and avocado

Enjoy!

    Notes

    • This salad would be great with shrimp and chicken if you want more protein 
    • If you are meal prepping this salad, store the elote salad separate of the kale and mix when ready to eat

    Single Serve Carrot Cake Cinnamon Roll 🥕 I lov Single Serve Carrot Cake Cinnamon Roll 🥕 I love a good cinnamon roll but hate that I have to make 6 or 12 when it’s just me and Sean. Erin ( aka @bodybybreakfast ) solved this issue by making her single serve recipe! I love anything carrot cake, especially around Easter so had to make one to start off Easter weekend on sweet note! This turned out incredible and there is a good chance I’ll have another one tomorrow and Sunday for brunch I made a few tweaks to Erins recipe but she deserves all the credit for these - check out her posts/reels on how to make! dEATS🥕 What you’ll need: Dough: •1/2 cup flour •3/4 tsp baking powder •2 tbsp water •2 tbsp plain nonfat Greek yogurt •1/4 tsp salt •1/2 tsp yeast •1 tsp @wholeearthsweetener allulose baking blend •1 small carrot, grated •1/2 tsp cinnamon •1/2 tsp nutmeg Filling: •coconut oil spray •1 tsp @wholeearthsweetener brown sugar •1/2 tsp cinnamon •a few raisins (optional) Cream cheese frosting: •1 tsp cream cheese, room temp •1/2 tsp almond milk •1/4 tsp vanilla extract •1/2 tsp @wholeearthsweetener allulose blend How to make it •mix all the ingredients for the dough, knead until combined •roll into rectangle and top with filling •go check out @bodybybreakfast on how to properly roll and put in ramekin •microwave for 60-90 seconds, mine was done in 75 seconds •mix frosting ingredients together and pour over cinnamon roll •optional: top with leftover grated carrot •enjoy!
    Parmesan crusted smashed brussels sprouts🌱🧀 Parmesan crusted smashed brussels sprouts🌱🧀 Need a last min recipe for your Easter feast? Or a delicious way to eat brussels sprouts?! This recipe is it! I ate the entire batch for lunch today and they were delish, so much so I didn’t even share with Sean dEATS🌱🧀 What you’ll need: (Everything is Trader Joe’s) •bag of Brussels sprouts, trimmed •avocado oil •salt •garlic powder •black pepper •shredded Parmesan cheese •lemon juice How to do it: •preheat oven to 425 •boil a pot of water and add some salt •add trimmed Brussels sprouts and boil until tender, about 10 minutes •place in ice bath •squeeze out excess water and place on baking sheet •with a cup, smash the Brussels sprouts •coat with avocado oil, salt, garlic powder •bake for 12 minutes, flip and bake for another 5. Add a pinch of Parmesan to each Brussels sprout and place back in oven for 10 minutes •broil for 2 minutes •once out of oven, squeeze juice of lemon and some cracked pepper over them •enjoy!
    Vegan Greek Inspired Crunch Wrap Supreme ☀️ T Vegan Greek Inspired Crunch Wrap Supreme ☀️ This might be the best thing I’ve made in awhile! All my favorite flavors combined into a grilled tortilla, what’s not to love?! dEATS☀️ (Swipe for ingredients used) •handful of chickpeas (the Greek chickpeas from TJs would be an amazing sub if you can find them!) •1 tortilla + 1/4 of another •1 tablespoon romesco sauce •1 tablespoon vegan tzatziki •handful of lettuce, onion and tomato •a few pita chips, crumbled How to make it: •layer ingredients on tortilla in the following order romesco sauce, chickpeas, veggies, tzatziki and pita chips •cut small circle of tortilla to cover ingredients •fold larger tortilla on top •grill fold side down on medium for 2 min •flip and grill for another 2 •cut and enjoy!
    Grain Bowl Salads🥗 I shared this grain bowl on Grain Bowl Salads🥗 I shared this grain bowl on my stories last week and figured it deserved a spot on the feed because most of my weekday lunches look like this. They take 5 min to put together so perfect when I’m in back to back zoom meetings I like to batch make grains for the week over the weekend (check out my reels for how to make quinoa and brown rice in the instant pot) and I always have some veggies that are easy to throw in, like tomatoes and my current obsession, @lovebeets Hope this helps provide some inspo if you’re burnt out trying to think of easy, healthy and delicious lunch ideas! dEATS🥗 What you’ll need: •quinoa •arugula •tomatoes •mini sweet peppers •balsamic beets ( I used @lovebeets ) •green olives •slivered almonds •salt and pepper •lemon juice How to do it: •place all your ingredients in a bowl •mix well •enjoy!
    Pitaya Bowl 🌴☀️ Now that the weather is st Pitaya Bowl 🌴☀️ Now that the weather is starting to warm up, I’ve noticed my cravings have shifted and I am loving these smoothie bowls! I personally choose pitaya (dragon fruit) over açaí because the color is just so dang beautiful! I blend mine with frozen mango, banana and riced cauliflower (I promise you can’t taste it and it makes it extra creamy!) and sometimes add some collagen for additional protein The topping combinations are endless but I did more dragon fruit, kiwi and unsweetened coconut + some hemp and chia seeds and a drizzle of honey. This bowl tastes like your $15 bowl from your local smoothie shop but is a fraction of the price! dEATS🌴☀️ What you’ll need: •1 pack of @pitayafoods frozen pitaya •1/4 cup frozen mango •1/2 frozen banana •1/2 cup frozen cauliflower rice •1/2 cup vanilla almond milk •optional: 2 scoops of collagen •toppings: sliced kiwi, dragonfruit, hemp seeds, chia seeds, unsweetened coconut flakes, honey (all from @traderjoeslist ) How to do it: •throw all your ingredients in the blender (minus toppings). I try and use as little almond milk as possible so it’s nice and thick, add a little more if needed •pour in bowl and top with whatever toppings you desire! •enjoy!
    Roasted eggplant, tomato & garlic pasta 🍝 This Roasted eggplant, tomato & garlic pasta 🍝 This recipe is vegetarian, gluten+grain free thanks to @taste_republic cauliflower linguine! We eat pasta weekly and I love trying new sauces/toppings. One of my favorites is this simple roasted veggie option. I just roast the veggies and toss them with some pasta, add capers, red pepper flakes, black pepper and some parsley and it tastes like a gourmet meal! I picked up @taste_republic at @wholefoods earlier so skipped my usual pasta and I would have never known it was gluten free (Seans only comment on this meal was it was incredible so he obviously couldn’t tell either) so it’s perfect for any pasta lover! It cooks in 2-3 minutes so great for a quick and easy meal Have you tried the @taste_republic pasta yet? What did you think?! We will definitely be picking it up again next time I’m at @wholefoods dEATS 🍝 What you’ll need: •head of garlic •medium eggplant, cubed •cherry tomatoes, halved •capers •red pepper flakes •black pepper •salt •avocado oil •fresh parsley, to garnish •1 package of @taste_republic cauliflower linguini How to make it: •preheat oven to 400 •cut off head of garlic, spray with avocado oil and wrap in foil •toss eggplant in avocado oil, coat with salt •place eggplant and garlic in oven for 45 minutes •add tomatoes with 15 minutes left •cook linguini as instructed •once done, toss linguini with roasted veggies, capers, red pepper flakes and black pepper.     Carrot Cake Waffles 🥕🧇 Since it’s spring, Carrot Cake Waffles 🥕🧇 Since it’s spring, I’m craving all things carrot cake (tbh I crave it year round but especially now). I’ve been wanting to make waffles for a bit so decided to combine my two cravings & these beauties were born (& they are delish!) I used the protein pancake mix from @traderjoes but I’m sure you could sub any pancake mix and get the same result. These were easy to make, super delicious and filling from the protein! This would be a fun Easter brunch idea 🐰definitely make them and let me know what you think! dEATS🥕🧇 What you’ll need: •1/3 cup of @traderjoeslist protein pancake mix •1 egg ( @vitalfarms ) •2 tbsp vanilla almond milk (I used vanilla @nutpods ) •1 medium carrot, shredded •splash of vanilla •1 tbsp @wholeearthsweetener brown sugar blend •1/2 teaspoon of each: cinnamon, ginger, nutmeg •dash of salt For icing: •1 tbsp light cream cheese •1 tsp @nutpods (or any milk) •1 tsp powdered sugar •splash of vanilla •optional: crushed walnuts How to make it: •mix all waffle mix in a bowl •pour 2 tbsp of mix in oiled waffle maker (I have a mini dash) •let cook for 3-4 minutes •make icing by stirring all ingredients together •pour over waffles with some remaining carrot shreds and some crushed walnuts •enjoy!
    Zaatar roasted cauliflower, quinoa and Greek salad Zaatar roasted cauliflower, quinoa and Greek salad bowl ☀️ Made this for dinner Sunday night and it was delicious! It would also be amazing for meal prep and to have for lunches throughout the week. dEATS☀️ (Everything is @traderjoeslist ) What you’ll need: •quinoa For herbed tahini dressing: •1 tablespoon herbed tahini sauce •lemon juice •salt •water (to thin) For the zaatar roasted cauliflower: •a head of cauliflower •avocado oil •1/4 cup zaatar seasoning Greek salad: •cucumber •mini sweet bell peppers •tomatoes •red onion •chickpeas •parsley •lemon juice •red wine vinegar How to do it: •make quinoa. I make mine in the instantpot For zaatar roasted cauliflower: •preheat oven to 425 •chop cauliflower into small florets •coat with avocado oil •toss with zaatar •bake for 30 minutes or until crispy For Greek salad: •chop all veggies and drain and rinse chickpeas •combine in bowl •add lemon juice and red wine vinegar. Mix well Herbed tahini dressing •combine herbed tahini sauce with lemon juice, salt and water to thin Assemble bowl: •add quinoa •add greek salad •add roasted cauliflower •top with herbed tahini sauce and parsley •enjoy!
