Have a Sweet Tooth?
Then this recipe for raspberry white chocolate bark is for you! My sweet tooth has been insane lately, I have to eat something sweet after lunch and dinner. As part of repairing my relationship with food, I’m doing my best to not restrict any foods and allow myself to eat what I am craving which means a little sweet treat twice a day. This bark has been perfect for my sweet tooth, I can break off a small peice and enjoy it and my sweet tooth is gone!
Ingredients for Raspberry White Chocolate Bark
The best part about this bark is the minimal ingredients, most of which I always have laying around my apartment. What you’ll need:
- 1 cup of white chocolate. I use Ghirardelli white chocolate because it melts so well, is super creamy and the taste can’t be beat
- 2 tablespoons of raspberry jam – I used one from Trader Joe’s, it’s one of our favorites because it’s not too sweet.
- 2 tablespoons of freeze dried raspberries. If you don’t live near a Trader Joe’s you can buy them on Amazon here.
How to make Raspberry White Chocolate Bark
- Melt your chocolate in a double broiler. As tempting as it is to melt your chocolate in the microwave, take the time to make a double broiler if you don’t have one. I used this tutorial that I found from Rachel Ray.
- In a pan covered in parchment paper, spread the melted chocolate in a thin layer
- Warm up the jam for a few seconds (makes it easier to spread) and drizzle over the melted chocolate.
- Using a toothpick or chopstick, draw figure eights to spread the jam throughout the chocolate until its swirled throughout.
- Crush up the freeze dried raspberries and press over the melted chocolate.
- Place in freezer and let the chocolate harden, takes about 10 minutes
- Break apart into small pieces.
- Store in an air tight container – I kept mine in my fridge
- Enjoy!
Don’t like White Chocolate?
This recipe is so versatile, you can switch out the chocolate for milk or dark. I chose white because I wanted the red raspberries to really pop but this would be incredible with dark chocolate as well.
You could also switch up the swirl and use a different jam or even peanut butter. The toppings you could use are endless as well, I think pretzels or nuts would be a great addition, whatever you fancy – this recipe will work for it! Raspberry White Chocolate Bark
Ingredients
- 1 cup White Chocolate Chips
- 2 tbsp Raspberry Jam
- 2 tbsp Freeze Dried Raspberries
Instructions
- Melt chocolate in double broiler
- Spread over parchment paper into thin later
- Top with jam
- Using toothpick or chopstick, swirl jam with chocolate
- Crush up freeze-dried raspberries and pat into chocolate
- Place in freezer until hardened
- Break into pieces
- Enjoy!
Notes
- Don’t like white chocolate? Use milk or dark chocolate instead!
- Watching your sugar intake? Use a sugar free chocolate, my favorite brand is Lilys which can be found at most retailers.
- The variety is endless! You could swirl in peanut butter and top with pretzels and sea salt or switch up the jam and top with nuts!
